做法:春(chūn )笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生(shēng )姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋(sǔn ),盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时(shí )候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
