做(zuò )法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片(piàn )、葱(cōng )段翻(fān )炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀(yún ),加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
