做法:春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀(yún ),加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖。
