做法:春(chūn )笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切成段(duàn )。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖(gài )大(dà )火煮开后转中(zhōng )火。煮(zhǔ )到(dào )水快熬干的(de )时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
