做(zuò )法(fǎ ):春(chūn )笋切(qiē )成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切(qiē )片(piàn ),葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
